An Evening of Peruvian Food

Much like Filipino food, Peruvian cuisine is greatly defined by influences from its past colonizers and immigrants from Spain, Italy, China, Japan, and Africa. In fact, Peru has the largest population outside Japan  leading to a fusion of Japanese traditions and Peruvian Ingredients – known as Nikkei cuisine, a delicious combination which has influenced chefs everywhere.

Combination of hands-on cooking and demonstration. Eat as you cook and takeaway your creations. You will leave with tips and tricks to cook more delicious dishes at home. This class is suitable for all abilities.

Examples of what you might cook during the class:

  • Don ceviche (raw sea-bass, quickly cured in lime juice, soy and sesame)
  • Tacu-Tacu (delicious rice-based dish (which can easily be meal in itself) is often served with steak or seafood)
  • Causa Croquetas (deep-fried Peruvian croquettes are perfect for parties)
  • Peruvian quinoa sushi (Extraordinary fusion dish, mixing Peruvian ingredients and Japanese techniques)
  • Lomo Saltado (Traditional steak stir-fry, served with sticky rice and fries)
  • Aji de Gallina (Thickened with nuts and bread, this creamy chicken dish is super-tasty)

All ingredients provided, you will eat as you cook and take home the additional dishes, bring containers or use our simple ones. Copies of the recipes will be emailed to you after the class. The added bonus is the washing up is all done for you!

Paul started his work in kitchens washing dishes as a 15 year old, and soon grew to love the hustle and bustle of this industry. He’s now worked as a professional chef for 24 years in kitchens all over the UK, as well as the U.A.E and Netherlands. As well as sharing his love for food at Cooking It, Mark also works at the National Chef Academy as Vice Principal, combining his passion for food and teaching with enthusiastic apprentice chefs. As a chef he’s willing to try anything and is always on the lookout for unique flavour combinations.
